Eating healthier and making better choices has been a priority of mine for the past few months. One day I woke up and decided that I was tired of feeling tired. I couldn’t make it through the day without a nap and that short nap sometimes turned into 3 hours. I cut a lot of foods from my diet including those high in sugar and sodium. Even though I feel transformed after a few slight changes there are a still things I had a hard time letting go of and one of those was my beloved carbs. I have always been a big bread eater and never paid attention to the brand, nutritional value, or calories in the loaves I was tossing into the cart. Bread is bread, right? Wrong!

Despite all of the gloomy weather that has taken over South Florida lately I am still looking forward to a summer full of sunshine and outdoor fun. Hopefully by the time school lets out next month the rain clouds will have passed and we will be able to enjoy what Florida is known for, warm beautiful weather. Is tomorrow really the first day of May? Spring is flying by right before my eyes. Soon it will be the end of the school year and the beginning of a long awaited Summer vacation. I can’t stress enough how thrilled I am to not have to wake up before the sun rises each day. The next month or so is going to be hectic, from the end of the year classroom celebrations to preparing for Summer camp activities. I have plenty to do and each day it seems like something new gets added to that list. There really isn’t very much time in between either. The last thing I want to do after a busy day of running around is slave away in the kitchen. Simple meals are a must and while we all appreciate a quick fix satisfy hungry tummies, it doesn’t mean they have to be bland or boring. Salted Caramel SNACK ATTACK Brownies

I’m a sucker for sweet and salty desserts, nothing new. They are easily my favorite thing to create and consume even though I have been trying REALLY hard to behave myself lately. With the exception of a small piece of pie on Easter I have been sugar-sober for over a month now. That’s a long time for someone that enjoys baking weekly and has a sweet tooth that could kill.  I have still been actively working on my “baking bucket list” checklist and today I finally made salted caramel sauce from scratch. What took me so long? This stuff is incredible! Sweet, salty, creamy, and gooey – now that’s inspiration. Easily a future addiction.

Spring is in the air and I love absolutely everything that it entails. With Easter being a mere six days away I have been busy stuffing eggs with candy, putting the finishing touches on Toodie’s basket, and thinking of a few treats to make for our family get together on Sunday. Breakfast is said to be the meal of champions but I prefer my my morning favorites other times of the day. I never thought in a million years that I would ever consider myself a sports fan. I grew up loving the occasional game of kickball in the front yard and going to baseball games with my grandfather. My family has always been die hard sports fanatics but not me. I was always a “girly girl” who participated in ballet and jazz, but never a contact sport that required me to get down and dirty. My how times have changed. Today I couldn’t do a plié without hearing a bone crack. I much rather slap on my team colors and scream at the television as the MVP pulls off the greatest slam dunk of the game. Basketball season gives us the excuse to hoot and holler all we want. No judgements right?  It’s March and that means it’s time to shoot some hoops while getting your game day grub on too.

I learned two things this past (very eventful) weekend- birthday parties are A LOT of work and mac & cheese never lasts around a large group of people. In all honesty it doesn’t really last long around anyone, myself included. Macaroni and cheese is a staple side dish and a cozy comfort food enjoyed by just about everyone. There is something utterly satisfying within that big bowl of noodles covered in a thick  creamy blend of cheeses. It’s warm, gooey, and decadent. Some prefer the classic mac but I like mine with an extra kick. Pepper jack is where it’s at! That’s the thing about mac & cheese.. you can always enhance it and add your own flavors for a different cheesy experience each time.
