Oven Roasted Parmesan and Garlic Truffle Potatoes

Move over holiday ham and let the side dishes shine! Roasted Parmesan and Garlic Truffle Potatoes are a delicacy and star of any festive spread.

Ingredients

  • olive oil
  • 1-1/2 pounds of diced red potatoes
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons truffle oil
  • 1 tablespoon corn starch
  • 1/2 teaspoon minced garlic
  • 1 teaspoon McCormick® Paprika Powder
  • 1 teaspoon McCormick® Onion Powder
  • 1/2 teaspoon McCormick® Garlic Powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon McCormick® Ground Black Pepper
  • dried McCormick® Parsley Flakes

Instructions

    1. Preheat oven to 400 degrees. Use cooking spray to lightly grease a baking sheet or line with parchment paper

    2. Wash, dry, and dice potatoes into 1 inch bite-sized cubes. Pat with a paper towel to remove any excess moisture before transferring to a large bowl.

    3. Toss pieces of potatoes in truffle oil until evenly coated.

    4. Add cornstarch, McCormick® seasonings, Parmesan cheese, and fresh garlic. Continue to toss.

    5. Transfer potatoes to baking sheet and spread apart until a single layer is formed. Sprinkle parsley on top.

    6. Roast potatoes for 30-35 minutes or until golden brown and crispy. Also, be sure to flip the potatoes halfway through so they cook evenly.

    7. Remove from oven and allow to cool for 5-10 minutes before tossing in truffle oil. Sprinkle sea salt on top for a finishing touch.
