Despite all of the gloomy weather that has taken over South Florida lately I am still looking forward to a summer full of sunshine and outdoor fun. Hopefully by the time school lets out next month the rain clouds will have passed and we will be able to enjoy what Florida is known for, warm beautiful weather. While the days are still generally hot, in the high 90’s, we have been spending more time inside to avoid the rain, mud, and mess that greets us when we venture into the backyard. Is tomorrow really the first day of May? Spring is flying by right before my eyes. Soon it will be the end of the school year and the beginning of a long awaited Summer vacation. I can’t stress enough how thrilled I am to not have to wake up before the sun rises each day. The next month or so is going to be hectic, from the end of the year classroom celebrations to preparing for Summer camp activities. I have plenty to do and each day it seems like something new gets added to that list. There really isn’t very much time in between either. The last thing I want to do after a busy day of running around is slave away in the kitchen. Simple meals are a must and while we all appreciate a quick fix satisfy hungry tummies, it doesn’t mean they have to be bland or boring. Salted Caramel SNACK ATTACK Brownies

I’m a sucker for sweet and salty desserts, nothing new. They are easily my favorite thing to create and consume even though I have been trying REALLY hard to behave myself lately. With the exception of a small piece of pie on Easter I have been sugar-sober for over a month now. That’s a long time for someone that enjoys baking weekly and has a sweet tooth that could kill.  I have still been actively working on my “baking bucket list” checklist and today I finally made salted caramel sauce from scratch. What took me so long? This stuff is incredible! Sweet, salty, creamy, and gooey – now that’s inspiration. Easily a future addiction.

Did you enjoy your Easter? We sure did. I survived the food induced coma from last weekend and am ready to soak up the rest of Spring. The weather has been beautiful here in Florida. For once it isn’t unbearably hot, humid, and raining. We’ve been spending much more time enjoying being outside while winding down after a long day at school. If your kids are anything like mine then the first thing they do when they walk through the door is request a snack before they start homework. Toodie’s preference is always vanilla ice cream with chocolate powder sprinkled on top. Apparently, this is “healthy” because ice cream is made from milk and milk comes from cows and cows are animals that live on a farm. The logic of a little person. This is not exactly mom’s idea of a nutritious snack even though it looks as yummy as it sounds.

Spring is in the air and I love absolutely everything that it entails. With Easter being a mere six days away I have been busy stuffing eggs with candy, putting the finishing touches on Toodie’s basket, and thinking of a few treats to make for our family get together on Sunday. Like the majority of the holidays, my mom leaves the dessert table up to me and that’s a lot of pressure. Breakfast is said to be the meal of champions but I prefer my my morning favorites other times of the day. I never thought in a million years that I would ever consider myself a sports fan. I grew up loving the occasional game of kickball in the front yard and going to baseball games with my grandfather. My family has always been die hard sports fanatics but not me. I was always a “girly girl” who participated in ballet and jazz, but never a contact sport that required me to get down and dirty. My how times have changed. Today I couldn’t do a plié without hearing a bone crack. I much rather slap on my team colors and scream at the television as the MVP pulls off the greatest slam dunk of the game. Basketball season gives us the excuse to hoot and holler all we want. No judgements right?  It’s March and that means it’s time to shoot some hoops while getting your game day grub on too.

I learned two things this past (very eventful) weekend- birthday parties are A LOT of work and mac & cheese never lasts around a large group of people. In all honesty it doesn’t really last long around anyone, myself included. Macaroni and cheese is a staple side dish and a cozy comfort food enjoyed by just about everyone. There is something utterly satisfying within that big bowl of noodles covered in a thick  creamy blend of cheeses. It’s warm, gooey, and decadent. Some prefer the classic mac but I like mine with an extra kick. Pepper jack is where it’s at! That’s the thing about mac & cheese.. you can always enhance it and add your own flavors for a different cheesy experience each time.
