I’ve developed a patten over the past month and I have noticed that Wednesdays are the appointed day of the week in which I get my bake on. It may be because it’s the only day of the week when I have the house to myself without any distractions or interruptions. That means extra time to get in touch with my sweet side, the one that involves a spatula and cookie dough. You can find bacon in over a thousand recipes, from your grandmother’s homemade Split Pea Soup to Smoked Macaroni & Cheese. They’re all delicious. But after many weeks of searching for baking inspiration I came to the conclusion that there just aren’t enough desserts featuring this decadent ingredient. By now you should know that based on my other recipes I have an infatuation with anything sweet and salty. My latest creation, Maple Bacon Toffee Bark, combines crisp salty bacon, sweet toffee, and rich caramel. Add a hint of sea salt and your taste buds will be sent in overload with the perfect balance of sweet, salty, and savory.

I expected this Summer to be much more sunny than it has been. Usually we have endless weeks of scalding hot days with little to no rain. Lately it’s been raining none stop here, with the exception of a few days here and there. The weather is driving me crazy and sadly it’s been cutting into grilling season. Our trusty outdoor appliance has been covered for long enough without any tender love and care. It’s a good thing I found an alternative way to create memorable meal time moments with family and friends this Summer.

There are many things that excite me about Summer time- sunshine, homemade lemonade, sleeping in on the weekends, laying out at the pool, and taking my little one on local adventures. It’s hard to believe that there is only a little over a month of Summer left before the school year starts. I feel like it was just yesterday that we were rummaging through the garage in search of water guns, pool floats, and beach toys. Soon we will be packing up once again until Summer rolls back around next year. We have spent many days soaking up the sunshine and cooling off with a big glass of fruit juice in hand. A nice cold beverage is a must have when sitting by the pool or playing in the park this time of year. Florida is HOT and this Summer was no exception. The moment all the fun comes to an end will be a sad day in this house. Luckily, I found a way to soften the blow and sweeten the moment by whipping up a batch of Kool-Aid Orange Creamsicle Bars made by yours truly.
